Disinfectants come in two main categories, those that oxidise and those that do not.
The oxidisers like sodium hypochlorite (bleach) and hydrogen peroxide work by destroying cells and this of course limit the ability of the bacteria and viruses to grow. They work best when applied to specific areas because their action can be diminished if there are a lot of other cells in the areas being disinfected (e.g. excess food).
Common bleach is made from sodium hypochlorite. It is very effective and inexpensive. Another advantage is that it can be used with hard water but getting the pH right is important because this can greatly affect the efficacy. Also, because the chlorine declines over time, careful attention must be placed on using it before its best before date.
The non-oxidisers include the quaternary ammonium compounds (QAC’s), biguanides and triamines. These are more specific in their method of disinfection. QACs for example, are the most widely used disinfectants in the food industry because they have low toxicity and they do not alter the taste of food they contact with. They are not so effective against moulds and fungal growth but they do work well against all types of bacteria.
